Kelate's Culture of Engagement and Married




1. Spy

Introducing Special Gravy in Kelantan...



Budu is a fish sauce and one of the best known fermented seafood products in Kelantan, Malaysia as well as Southern Thailand.
It is traditionally made by mixing anchovy and salt in the range of ratio of 2:1 to 6:1 and allow to ferment for 140 to 200 days. It is used as a flavoring and is normally taken with fish, rice and raw vegetables.
It is similar to the patis in Philippinesketjap-ikan in Indonesiangapi in Burma, nuoc mam in Vietnamishiru or shottsuru in Japancolombo-cure in India and Pakistanyeesu in China and aekjeot in Korea.
The fish product is the result of hydrolysis of fish and microbial proteases. The flavor and aroma of Budu are produced by the action of proteolytic microorganisms surviving during the fermentation process. Palm sugar and tamarind are usually added to promote the browning reaction occur and resulting in dark brown color. The ratio of fish to salt plays an important key in the final desired product. The different concentration of salt influences the microbial and enzymatic activity, resulting in different flavors. The microorganisms found during Budu production are generally classified as halophilic. The microorganisms play important roles in protein degradation and flavor-aroma development.
It is a traditional condiment in the East Coast of Peninsular Malaysia, particularly in the state of Kelantan. Even ethnic Chinese in Kelantan are involved in Budu production. Anchovy and it's products like budu is high in protein and uric acid content, thus not recommended for people with gout condition. However, uric acid content in anchovy is actually lower than tuna.
Budu which was made from anchovy sauce have shown potential as an anti-cancer agent.
Budu also as a food sourced from fish have potential as brain food.
New form of budu in powder forms have been developed by Politeknik Kota Bharu (PKB) student. This allow easier storage and transport as it is lighter and less prone to bottle breakage.

Introducing Our Kelantan State

Ambo Anok Kelate!



When we talked about Kelantan State, we will definitely imagine their food, beach, people, culture and heritage. But are we really know about the culture and heritage in Kelantan? I don't think so....
So here a bit brief regarding Kelantan history...

"Kelantan is a state neighboring the southern provinces of Thailand, formerly known as Patani Darul Salam. Historically, Kelantan has a very close relationship with the Sultanate of Patani Sultanate supported by Islam. Kelantan Sultanate where blood relatives Sultanate and the Sultanate of Patani State Champa. After being betrayed by the Patani Sultanate Siam and the British then it was conquered by Thailand. Patani was broken into small regions consisting of Yala (Yala), Narathiwat (Tower), Pattani and Songkla (Senggora).


Under the British-Siamese treaty of 1948 demographics of southern Siam government has separated. Kelantan goes under Malaysia when the countries under Thailand is Pattani. By the way Kelantan has a unique culture that is very tightly linked to the culture of Patani State. Cultural assimilation between Malays, Siamese and Islam produces Dikir Barat, Main Puteri, Mak Yong and for instance. Mak Yong is influenced by the culture of Siam (Thailand), while Dikir Barat also has Islamic elements. Main Puteri is also said to be impregnated by the Hindu culture. Kelantan is also rich with traditional food and Malay food different from any other country. Although there are many entertainment and traditional elements in kelantan that can be inherited from generation to generation, But today many traditional games and entertainment has not repeated. Most entertainment like Main Puteri been discontinued because it contains animism beliefs that may bring negative elements to the community.
